Mudslide Ice Cream

Based on a popular adult drink, this ice cream has satisfying “night out” flavor when you opt to stay in.
INGREDIENTS | YIELD: 1 QUART
1 cup Irish cream liqueur
1 cup coffee-flavored liqueur 3 cups heavy cream
1 cup half and half
¾ cup sugar
6 large egg yolks
7 ounces dark chocolate, finely chopped 1 tablespoon vanilla extract
⅓ cup mini chocolate chips

Mudslide Drinks
The Mudslide’s delicious origin can be traced back to the Caribbean in the 1950s where it was allegedly invented at the Wreck Bar & Grill in the Cayman Islands.

1. Bring Irish cream and coffee-flavored liqueurs to a boil in a medium saucepan, and allow to reduce by half.
2. Add cream, half and half, and sugar to a steaming simmer. Remove from heat.
3. Whisk eggs in a large bowl. Slowly stream hot milk mixture into eggs until fully incorporated. Return mixture to heat, and cook over medium heat until thick, being careful not to boil.
4. Strain into a clean bowl. Add the chopped chocolate and vanilla; stir until smooth. Refrigerate 4 hours to overnight.
5. Add to ice cream maker and follow manufacturer’s instructions for freezing. Fold in the mini chocolate chips.
