Cucumber Mint Frozen Yogurt

Cucumbers and mint are a classic, refreshing combination for those sweltering days. Though not your average frozen dessert, this cool, creamy treat deserves some recognition

INGREDIENTS | YIELD: 1 QUART
6 cucumbers, peeled, seeded, and chopped
⅓ cup fresh mint leaves
½ cup honey
8 ounces plain Greek yogurt (full fat) Pinch salt
Juice of 1 lime
1 tablespoon gin or vanilla extract

Cucumbers contain most of the vitamins you need every day. Just one cucumber contains vitamins B1, B2, B3, B5, and B6, folic acid, vitamin C, calcium, iron, magnesium, phosphorus, potassium, and zinc.
