Dulce de Leche Ice Cream

The flavor of dulce de leche is very similar to caramel but with a bit more milk and a little less sugar. If you are lucky, you can find cans of dulce de leche on your supermarket shelf, often with sweetened condensed milks, or you can make your own;

INGREDIENTS | YIELD: 1 QUART
2 cups whole milk 1 cup cream
2 (14-ounce) cans dulce de leche 1 teaspoon vanilla extract

Dulce de Leche
Literally translated in Spanish, dulce de leche means “sweet of milk,” or milk candy.
It is prepared by slowly heating sweetened milk to create a product that is sweet and rich, and much like caramel. It is highly popular in Latin cultures. You can also make your own at home with very little effort; the recipe is found in Chapter 17.
1. In a medium saucepan, bring milk and cream to a boil. Remove from heat and whisk in dulce de leche and vanilla. Refrigerate for 4 hours.
2. Add to ice cream maker and follow manufacturer’s instructions for freezing.
